Giovanni our resident chef has taken his family knowledge and skill to produce the most popular product within our range. Pugh's Piglets Porchetta Medallions are served the length and breadth of the country in Top London Restaurants, Gastro Pubs, Hotels and also Corporate Events.
Traditional Style:
Our traditional style medallions are based on the Rome region style of porchetta
and are lined with fresh rosemary, fresh garlic, bay leaves and a little salt and pepper. Each roll will feed between eight to ten people and when produced each roll is strung to the best portion control to aid chef's easy ability to see exactly how many portions they will be able to gain out of the roll (Usually 8 - 10 portions).
Sage:
Pugh's sage style medallions are similar style ingredients to the traditional medallions but we swap the fresh rosemary for fresh sage.

Fennel:
The fennel style medallions were introduced back in 2005 and have proved a big hit due to the distinct flavour.

Somerset:
The name was the brain child of Michael our skilled master butcher, and as the name suggests contains apple. A great alternative for those amongst us who do not like garlic. The Somerset as the ingredients suggest below turn the crackling a wonderful dark golden brown and because of the sugar content from the apples and calvados you get a wonderful light sweet tasting roast.

Lancashire Black Pudding:
The name of this black beauty says it all. This is a superb taste of Lancashire "A hearty winter warmer from red rose county"

Christmas Fruits: (November - January)
"Ding dong merrily on high" Returning customers say to us that Christmas wouldn't be Christmas without this little gem. A seasonal lining of all the best tastes that this time of year has to offer. Again no garlic so dust off the mistletoe.

Christmas Port & Stilton: (November - January)
The name Says it all. A simple blend of a great port the finest Stilton and a few bread crumbs to soak up the goodness and keep it locked into the roll.
Plain Style:
We also supply the medallions plain with nothing added "simple" but defiantly not boring. We can add salt & pepper to season if you so wish.
