It is more than 100 years since the people of Skipton saw the last horse drawn dray wagon travelling from Scott's Skipton Brewery, delivering the final oak barrels of fine ales to their 32 tied Houses and Inns. Christopher Scott, a maltster from Leeds, commissioned the building of the Victorian Tower Brewery. The 60 barrel plant powered by water wheel, coal and later by steam was completed in 1816 taking 2 years to construct. In 1897 Scott & Co acquired Frederick Binns of White Horse Brewery, Keighley together with seven tied Houses & Inns. In 1902 Bentleys of Woodlesford, Leeds purchased Scotts entire estate, comprising of both breweries and all 39 Houses. Both breweries were closed two years later, the Houses and Inns being retained for Bentleys own brand. After a two-year study into the UK Brewing Industry, it was concluded that the giant breweries dominated the market with their standard range of products, and a total disregard for the localised production and flavours, and even worse, employment. The descision was made to resurrect Skipton's brewing industry and re-create flavours from yesteryear using the choicest of ingredients together with a company ethos that would be the envy of the compromising giants.

Copper Dragon Brewery was born in 2002 with a new building in Skipton. Bavarian Brewery Technologies were commissioned to build a 10bbl German Style steam powered Brew-House, Conical Fermenters and seperate Conditioning Tanks along with a process control system that would grace any concern. Due to the overwhelming success of Copper Dragon Brewery the 10bbl plant reached its capacity within the first six months. With continued investment Bavarian Brewey Technologies were once again commisioned to build a 30bbl steam powered Brewery, which is in addition to the original 10bb plant, and was completed in Autumn 2004. With the latest development Copper Dragon became a regional brewery, supplying outlets throughout Northern England. As part of the continuing development of this dynamic company, the brewery has formed 'Copper Dragon Estates Ltd' and starting in 2005 we will be acquiring pubs, inns & taverns throughout Northern England.
