posted a box of sea salt caramels to Australia last
Christmas - they arrived absolutely fine!

for a few weeks.... out looking for new cocoa!

I am very excited
- leaving cold dark February (and I am afraid, Valentines
Day chocolates) behind - and off to exotic South East
Asia. Initially this was a long awaited holiday but
given that so much of the world's cocoa is grown in
Malaysia and Indonesia it did not take me long to wonder
- maybe I could find a source of cocoa, find someone
to make it into chocolate, and then be able to use chocolate
that I know exactly where it is from and who is involved
in making it. With a small grant from a local enterprise
fund - I am all set to go. I will attempt to share what
I find along the way initially in a blog
and then of course on my return with lots of new chocolates.
With luck, my spring
markets will include lots of brand new chocolates to
taste
However,
as I am travelling, I am unable to make chocolates and
so will not be able to take new orders until my return;
first orders can be posted on the 16th March

We
have a wonderful new product having teamed up with Glen
Lyon Coffee Roasters. Braving major headaches and
caffeine overdoses, we tested a range of Fiona Grant's
amazing single estate coffees in combination with a
range of Duffy
Sheardown's amazing single estate chocolates to
find the perfect combinations. We chose organic Peruvian
Quebrada Valley coffee beans and in the Expresso bar
they are crushed into Panama 72% Tierra Oscura chocolate,
and for the Cafe au Lait and Skinny Latte bars, into
El Rey white chocolate from Venezuela.

launched a new product - the most fantastically thin
discs of gorgeous chocolate - crisp and light they
allow the chocolate flavours to emerge instantly on
the tongue. So thin, we have not worked out how to post
them yet, so available only in the Aberfeldy area! |

Award
winning flavour - Sea Salt Caramel
We made
these for a wedding client and as we have been trying
them out on friends and famiily to get the recipe right,
we have developed a sea salt caramel fan club! The sea
salt really counters the sweetness of the caramel -
which made with butter, cream and sugar is superbly
creamy. We supply these by the box, small and large.
