All chocolates are moulded using 70% cocoa chocolate, in a medium sized (about 10g) small shiny rectangular block. We use different designs on the top of the chocolate to distinguish the flavours within. Each box will contain four flavours, and the selection will change through the year depending on what is in season or what feels seasonal (Easter and Christmas in particular). The centre is a fresh cream ganache, made with white chocolate, milk chocolate or a 56% dark chocolate - the flavour being used will determine which. We usually try and ensure that each selection will contain a range of fillings - but this will be determined by what flavours are available. We infuse the natural flavours into the ganache; for example, for elderflower we use elderflower blossoms picked within an hour of making the centre, for wild mint we use the mint leaves.
