Heat a deep sauce pan with boiled water, add in dried noodles to cook for 3 minutes then soak it into ice cold water.
Heat a wok with oil, add in beansprout till almost cooked then pull in the drained noodles.
Use long chopstick to stir the noodles while adding spring onion, light soy sauce, dark soy sauce and oyster sauce till the noodles have been coated with even colour.
Drizzle on sesame oil and salt for seasoning then serve with chilli oil for a spicy version.
