Rich Fruit Cakes
Available in round, square, oval, heart, hexagonal and octagonal.
Sizes range from 4" up to 12" but vary according to the cake shape. If you have a particular preference, please contact me to find out the size/shape combinations.
Traditionally covered with a layer of marzipan and iced with either sugarpaste or Royal Icing ( with glycerine, if preferred, to make it soft-cutting)
Sponge Cakes
Available in a choice of either Madeira sponge or vanilla sponge with a vanilla or chocolate buttercream filling, or Death by Chocolate sponge with a chocolate fudge filling.
Available as round or square cakes
Iced in sugarpaste (extensive range of colours including white and ivory), chocolate flavoured sugarpaste (brown), or Belgian Chocolate paste (white, milk or plain chocolate). Although nut-free cannot be guraranteed, sponge cakes can be "double-iced" where the layer of marzipan is replaced with sugarpaste.
Portions will vary from cake to cake and depend upon a number of factors; the type of cake, sharpness of the knife and the competence of the person cutting it.
Traditionally a rich fruit cake is cut into portions 1" square so to calculate portions, simply multiply the length by the width; an 8" square will cut into roughly 64 portions. Round down the number to allow for wastage, e.g corner pieces and this will give an approximation.
Sponge cakes are cut into larger portions 1" x 2" square so expect to cut half the number of portions from a sponge cake.
